INGREDIENTS
1 packet ‘El Sabor’ wraps-tortillas
1/2 kg “Good quality” mince meat-beef
2 tsp cumin
2 tsp coriander
2 small dried chilli, whole.
few drops tabasco
6 all spice berries
2-4 cloves garlic, finely chopped
2 medium onions, finely chopped
3 tbs olive oil
1 tsp salt
freshly ground pepper
METHOD
1. Fry onions in olive oil along with spices for 5 mins,on medium heat, until onions are transparent and the spices are fragrant , stirring all the time, add garlic, cook for 2 mins and then add mince meat. ( When buying meat from butcher, ask for a good quality piece, no fat) .
2. Turn up the heat and stir and break up the meat until completely cooked through, 10 minutes at least and all liquid has been absorbed from the bottom of the saucepan. Tilt the saucepan to check, you want it almost dry and the meat all broken up into little bits.This takes about 10 minutes.
3. Before serving remove “allspice berries” and “chillies.”
4. Serve in a warmed serving bowl, surrounded by all the other accompaniments and lastly warm through the wraps, which only take two minutes in a preheated oven 100.C . Before placing wraps in oven, sprinkle with water, by putting your hand under the running tap and flicking the wraps with a little water in both sides. This prevents them going hard as they cool.
Accompaniments :
TOMATO AND CUCUMBER
2 tomatoes diced
1 cucumber peeled and diced
salt, olive oil
1. Place in two separate bowls, drizzle with oil, season.
YOGURT AND FRESH CORIANDER
1 carton, Greek thick ‘Fage-Total’ yogurt
3 tbs chopped coriander
1/2 tsp salt
1. Mix together, place in bowl.
CORN AND BUTTER
1 tin corn
a little butter
salt pepper
1. Heat through,drain,add butter and seasoning, place in bowl.
GRATED CHEESE
100g grated cheese
1. Place in bowl.
SHREDDED LETTUCE
4 shredded lettuce leaves
1.Place in bowl.
MEXICAN SALSA
This may seem a bit of a labour, the first time you make it, but every one loves it, which makes it all worth it! The Mince-meat can be cooked the day before, but it is more tasty cooked an hour before. Also excellent without the wrap, cold in summer, all piled on your plate…..
Arrange in pretty serving bowls and mix everything together on your warmed wrap and fold.
Here I have added Guacomoli, Corn and Mexican Saltsa…….
Fold the bottom up and then one by one the sides inwards.
Can also be eaten with out the wrap, less filling and just delicious !
