Ingredients
1 Melon
Glacé cherries
A little sugar, if needed
Mulberry leaves…If available.
Method
1. Wash and cut melon into suitable segments.I usually cut in half and then each half into three.
2. With a large cook’s knife cut under the melon flesh, near the skin near to peel, but not so near, that you are cutting through unripe melon.
3.Then cut across at 2 cm intervals, (see photo,) and gently push each slice in opposite directions!
4. Decorate with Glacé cherries and arrange on serving dish on a bed of Mulberry leaves, or other edible leaves, if available.
N.B. If the Melon is not very sweet, sprinkle with a little white sugar. The sugar melts straight away. This can be prepared two hours beforehand.
Summer Peach Yogurt And Lime Pudding ©

Ingredients
Two 200 g Cartons Greek thick “Fage/Total” Yogurt
4 Ripe juicy peaches, peeled & cubed
1 tbs Greek honey
2 tbs golden brown sugar
Finely grated lemon and or lime zest
A dash of gin (opt)
Edible flowers and leaves to decorate
(Geranium, Pansy, Mint, Basil or Verbena)
Method
1. Into a mixing bowl empty yogurt and add rest of ingredients.
2. Mix, pour into serving bowl, arrange neatly with spoon, cleaning around edge with kitchen paper. Sprinkle the top with a little brown sugar and decorate.
Delicious!
N.B. It is very important that the peaches are their beautiful summer ripeness.
There is nothing like ripe peaches!
Cream Cheese And Sweet Chili Sauce ©
This is just perfect for the summer, quick easy and delicious….
Easy Dip!
6 Persons
200 g packet cream cheese (Philadelphia)
1 jar/bottle sweet chili sauce
1 packet Ritz Biscuits or other
Sprig of parsley to decorate and fresh Chilies
Method
1. Turn out the cream cheese onto a serving dish.
2. Pour over the chili sauce, enough to well cover.
3. Decorate.
4. Serve with Ritz Biscuits or other biscuits of your choice
Simple and delicious!
Final result, delicious!
