An unusual combination that makes for a delicious dip.

From my dear friend and summer visitor, this lady has wonderful recipes up her sleeve!

Easy

 

 

Preparation Time: 1/2 hr

 

 

6-8 people

 

 

Ingredients

200 g Feta cheese

1.1/2 ( 300 g) cartons of Greek Fage Total thick yogurt

125 g unsalted pistachio nuts

2 tbs chopped  fresh coriander leaves

1 finely chopped red chilli

1 clove of garlic crushed

lime zest

salt pepper to taste

 

Garnish

10 whole pistachio nuts

1 sprig of coriander

 

Method

  1. Pulse pistachio nuts in blender briefly, (keeping a few whole ones aside for decoration). Reserve in bowl.
  2. Place feta, yogurt, crushed garlic, chopped chilly,  chopped coriander and lime zest in blender and briefly mix.
  3. Add pistachio nuts and blend very briefly.
  4. Place in bowl and garnish with whole pistachio nuts and a sprig of coriander.

  1. Gather your ingredients together.

2. Briefly pulse pistachio nuts. Reserve in separate bowl.

Place feta , yogurt and crushed garlic into blender.

Chop  fresh coriander, chilli and finely zest lime.

Add the rest of your ingredients to blender and blend briefly until just amalgamated.

Place in decorative bowl and garnish with whole pistachio nuts and a sprig of fresh coriander.

Freshly picked tarragon from the garden, thick Greek yogurt, Dijon mustard and a sprinkling of whole red pepper corns! It’s always fun to make up a recipe from the ingredients available and this is definitely one I shall be doing again.

Reminiscing over the summer’s activities long ago, we talked of our four day trip to the Epirus Mountains in northern Greece and the wonderful introduction our friends gave us to a place full of history and tradition. While lunching in the beautiful mountain village of Metsovo, we tried and then bought, the well known Metsovo smoked cheese. Here below is how they traditionally cook it.
